This is a basic recipe that I love to make at least every other week because it is so basic. Enjoy this low sodium high fiber meal. Please blog me back in what you think about this recipe.
Ingredients
2 cups Low Sodium Vegetable Broth
1 cup Brown Rice
16 oz Salsa (spicy or mild)
15 oz (1 can) Black Beans rinsed and drained
1 1/2 cub broccoli florets (thawed in microwave according to package directions)
1 tbsp. Taco Seasoning Mix
1 cup Low Fat shredded cheese.
Cooking Instructions
Preheat oven to 350 and spray a 9-inch baking dish with nonstick cooking spray. Combine broth and rice in a saucepan and bring to a boil. Reduce heat and simmer, covered, for 50 minutes. Stir together cooked rice and all remaining ingredients except cheese; spoon into prepared dish and top with cheese. Bake for 20 minutes or until heated through and cheese is melted.
