Ginger Chicken

Below is a great easy recipe for that has ginger in it.  Ginger has been linked with so many power benefits and a remedy for:

colic, irritable bowel, loss of appetite, chills, cold, flu, poor circulation, menstrual cramps, dyspepsia (bloating, heartburn, flatulence), indigestion and problems with gas and stomach cramps. Ginger is an anti-inflammatory herb. It has also been linked with helping with pain from arthritis, fevers, headaches, toothaches, coughs, bronchitis, osteoarthritis, rheumatoid arthritis, to ease tendinitis, lower cholesterol and blood-pressure and aid in preventing internal blood clots.

GINGER CHICKEN

 

Ingredients

  • 1/2 C Light Soy Sauce
  • 1/2 C Cooking Sherry
  • 1/4 Sugar Free Pancake Syrup (I like Joseph’s) or Agave Nectar
  • 2 Tbl Cornstarch or Ground Arrowroot
  • 3 Tbl Red Wine Vinegar
  • 1 to 1 1/2 inch piece Fresh Ginger, peeled
  • 4 Garlic Cloves, peeled
  • 1/4 tsp Hot Pepper Sauce
  • 6 Boneless Skinless Chicken Breasts

 

Instructions

Put garlic and ginger into food processor or blend and grind until fine. Add all other ingredients and blend together. Pour marinade into a ziploc with chicken breasts and marinate overnight in refrigerator. Cook chicken in a nonstick pan with cooking spray over medium high heat for 6 minutes on each side. Remove chicken and pour marinade into pan. Bring to a boil and reduce to simmer until it reduces to a glaze. Place chicken back in pan and coat them with glaze. Ready to serve.
