Ingredients
- 1/2 C Light Soy Sauce
- 1/2 C Cooking Sherry
- 1/4 Sugar Free Pancake Syrup (I like Joseph’s) or Agave Nectar
- 2 Tbl Cornstarch or Ground Arrowroot
- 3 Tbl Red Wine Vinegar
- 1 to 1 1/2 inch piece Fresh Ginger, peeled
- 4 Garlic Cloves, peeled
- 1/4 tsp Hot Pepper Sauce
- 6 Boneless Skinless Chicken Breasts
Instructions
Put garlic and ginger into food processor or blend and grind until fine. Add all other ingredients and blend together. Pour marinade into a ziploc with chicken breasts and marinate overnight in refrigerator. Cook chicken in a nonstick pan with cooking spray over medium high heat for 6 minutes on each side. Remove chicken and pour marinade into pan. Bring to a boil and reduce to simmer until it reduces to a glaze. Place chicken back in pan and coat them with glaze. Ready to serve.
