Lose Weight Fried Rice

1 Cup of Vegetable Broth
2 Cups of Black Rice
1 Tbsp of Coconut Oil (split in half)
2 Cups Fresh Green Beans cut in halves or smaller
1/2 White Onion minced
1 Cup of Mushrooms sliced (I used Bella Mushrooms)
1 Tbsp of Tamari
Wok (if you have it) or a pan that can sustain high heat.


Once Vegetable Broth is boiling add Black Rice for 20 minutes. While waiting for the rice to be done, prepare the vegetables. Add 1/2 Tbsp of coconut oil. Once oil is heated add the green beans for 2 minutes. Add onion and saute for 1 minute, Add mushrooms for 2 minutes. Take the vegetables out of the pan. Add 1 Tbsp of Coconut Oil and cooked black rice folding it in to add the oil throughout the rice. Add the vegetables back in and mix.
