Last month for our Girlfriends’ Dinner Susan (member of the studio) made this wonderful healthy Turkey Chili. Here’s the recipe & enjoy! It is so easy!
3 cans (15oz.) kidney beans, drained
3 cans (15oz.) pinto beans, drained
2 cans (28 oz.) whole tomatoes in juice
2 (½*) medium onions, diced (½ onion to be cooked with meat)
1 green bell pepper, diced
1 red bell pepper, diced
½ celery stalk, diced (use half of this when cooking turkey)
3 garlic cloves minced or pressed
*1 ½ tsp. salt (sea salt or Kosher salt taste best) – use ½ tsp salt when cooking turkey. Use *1 tsp salt in the crock-pot with the rest of the ingredients.
1 tablespoon black pepper
1 tsp. ground cumin
4 – 8 T. of chili powder (season to taste)
1.5 lbs. of ground turkey, fried with diced celery, ½ tsp of salt and set aside. (I fry the ground turkey in Pam and one teaspoon of olive oil.)
Put all ingredients in Crock-pot and stir to mix. Cook on high 1.5 hours, stir, then reduce to low and cook for another 4-5 hours.
*Add fried ground turkey or lean ground beef about one and ½ hours before serving.
*Large crock-pot is needed (7 quart?)
*Add other vegetables to your taste such as zucchini or yellow squash.
